Coming from a typical Indian household, the ‘highlight’ of almost all my holidays was the food! Compromising on any other part of the festivities could be overlooked but never the assortment of the meal. Years have gone by since I’ve celebrated any festival with all the members of my family thanks to everyone being in different cities with schedules one busier than the next. So you’d think my monstrous holiday appetite would’ve died down? Well, not one bit! The only thing that has changed perhaps is that I would consider skimping on the main course just so that I can delve right into dessert…

Having a sweet-tooth that peaks particularly during the holiday season, I decided to use my blog as an excuse to try and put together some quick and easy desserts that would be great for this time of the year. This recipe for the Apple Crumble Bites was the end result of one such baking session. These bite-sized delights are easy to make and require just everyday ingredients that you’d find around your house. So there’s really no excuse for you to not try it out! 🙂

APPLE CRUMBLE BITES

Ingredients

For the Apple Layer

3 Granny Smith apples

3 tablespoons maple syrup

2.5 tablespoons brown sugar

For the Crumble

3/4 cup quick oats

3/4 cup almond flour

2 tablespoons brown sugar

5 tablespoons maple syrup

2 tablespoons butter

A dash of cinnamon


Method

  1. Pre-heat oven to 350 degrees
  2. Peel, core and dice the apples and transfer it to a mixing bowl
  3. Mix in all the ingredients of the apple layer to the apple and microwave this for 5 minutes or until the apples soften
  4. In another bowl mix the ingredients for the crumble mixture until it’s nice and crumbly
  5. Put a tablespoon each of the crumble mixture in to greased, silicone cupcake liners and press it down firmly
  6. On top of the crumble mixture, add a second layer of the apple filling and top it with another layer of the crumble mixture
  7. Place the cupcake liners on a tray and bake for 15-20 minutes or until the crumble topping is golden brown.
  8. Let cool and serve

TIPS:

  1. You can replace the butter with coconut or vegetable oil to transform this into a completely vegan dessert option🙂
